Red, Chicken and black bean Enchiladas!

Yummy Enchilada but sort of a burrito. Whatever you want to call it these babies are delicous and the key is the sauce! You will be wishing you made more of it as you eat your enchilada and dip it in the sauce yum! Garnish with sour ceam and you have one delicious meal!
I came upon this creation when I got sick of the red enchilada sauce you buy in a can. They never tasted quite right and some had a werid metal after taste. So there I was on a quest for a delicious red sauce! I found a restaurant style recipe online at www.recipes .com and I tweaked it a bit and wallah! The most delicious red sauce! It's no cafe rio but its certinaly tasty for how easy it is to make!
Then I played with the inside ingrediants until it was perfect. Just chicken and cheese was not enough! It needed something and that is where black beans fit in perfectly. I hope you enjoy my creation.

Recipe: This will make about 10 enchiladas.

First boil three chicken breast till cooked through

Ingrediants for Red Sauce

While chicken is boiling start your enchilada sauce.  Get a medium size sauce pan and heat on medium. Add  1/4 cup of vegetable oil. Stir in 2 tablespoons of flour and 2 (1/4) tablespoons of chili powder. Cook until lightly brown


As soon as your sauce is lighly brown SLOWLY add one 8oz of tomaoto sauce and one can  of chicken broth.  Add 1/4 teaspoon of cumin and 1/4 teaspoon of garlic or garlic salt.
Cook on medium for 15 minutes
Shred chicken while waiting for enchilada sauce.  Set oven to 350 degrees.
Rinse Organic black beans in a strainer
Pour enchilada sauce in pan
Assemble enchiladas with chicken, beans and shredded cheese. You may add some of the sauce on the inside if you like.
Then roll it up and stick in pan.
Pour remaining red sauce over enchiladas coating well (especially the sides!).
Sprinkle with cheese
Cover with foil and bake for 20 minutes
Should make about 9 tasty and cheesy enchiladas!

Kara's Enchiladas

Ingrediants:

3 chicken breast
2 cups of shredded cheese
1 can of organic black beans
1 package of thin style tortillas

Red Enchilada Sauce

1/4 cup of vegetable oil
2 tablespoons of flour
2 (1/4) tablespoons of chili powder
1/4 teaspoon of cumin
1/4 teaspoon of garlic powder or garlic salt
1  eight ounce can of tomato sauce
1 can of chicken broth
